Have A Weight Watcher's Superbowl Fiesta!

It's a little over one month into the New Year and a lot of us either have given up with our healthy new year resolutions, or we may be on the verge of doing so - but don't let this year's Superbowl party be the end all for you. Remain strong and make these flavorful Weight Watcher recipes for the big event. Even if you're not on WW's, you can still indulge in these dishes without tackling the scale the day after.
Fresh Corn Salsa It's a little hard to track down fresh corn this time of year, but it's usually available at high-end markets. If you can't find it, substitute 1 1/2 cups frozen corn kernels, thawed — you'll lose the roasted taste but it'll be an easier dish. Makes 4 cups
Ingredients 3 ears corn, husks and silks removed 1 (15-ounce) can small white beans, drained and rinsed 3 Roma or plum tomatoes, chopped 1 small red onion, diced 2 pickled jalapeno chiles, seeded and finely chopped 1 medium green bell pepper, seeded and finely chopped 2 tablespoons cider vinegar 2 tablespoons packed cilantro leaves, minced 1 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper


Patrick Swayze Still Receiving Chemotherapy

Earlier this week it was reported by the National Enquirer that the star of A&E’s The Beast, Patrick Swayze had stopped receiving chemo treatment for his stage 4 pancreatic cancer. The Enquirer stated:
“There’s nothing more doctors can do for him. We are down to the wire and the goal now is to keep Patrick comfortable,” a family friend reportedly told the Enquirer.
However, Swayze’s rep set the record straight with Access Hollywood and reported that the star has ended his treatment run is “not true.”
“Patrick is continuing to receive treatment,” the rep said in a statement to Access.
On Thursday, when reached by phone, Patsy Swayze, Patrick’s mother, also shot down the claim.
“He hasn’t told me if he has [stopped],” Patsy told Access Hollywood.
Food Fight: The Battle Of Increasing Food Prices

With the rise in price of food and the failing economy, certain food products and supermarkets are doing what they can in these hard times. As a result, one food product making a change, are Girl Scout Cookies.
Who would have ever thought? Apparently your Girl Scout Cookie boxes are going to feel a little lighter this year, since they're going to be fewer Thin Mints, Do-si-dos and Tagalongs in a box. Also, the Lemon Chalet Creme will be a smaller size. Such a disappointment, I looovvee my Thin Mints!

Superbowl Food: Roasted Tomato Salsa

Going to a Superbowl party and don't know what to bring? Rather than having a jar of salsa, make your own. This yummy Roasted Tomato Salsa will keep you low on the calorie scale and 100% satisfied on taste.
PREP TIME 10 Min COOK TIME 10 Min READY IN 20 Min Original recipe yield 3 cups
INGREDIENTS (Nutrition) 12 roma (plum) tomatoes 2 cloves garlic, unpeeled 1 small onion, quartered 1 jalapeno chile pepper 1 1/2 tablespoons olive oil 1 teaspoon ground cumin 1/4 teaspoon salt 3 tablespoons fresh lime juice 1/4 cup chopped fresh cilantro
DIRECTIONS Preheat the broiler. In a medium baking dish, place roma (plum) tomatoes, garlic, onion and jalapeno chile pepper. Drizzle with olive oil. Checking often, broil 5 to 10 minutes, or until outsides of vegetables are charred. Remove vegetables from heat. Remove and discard tomato cores, jalapeno stem and garlic skins. In a food processor, coarsely chop the charred vegetables. Transfer to a medium bowl and mix in cumin, salt, lime juice and cilantro.

Emmy winner star of My Name Is Earl, Jaime Pressly, shares her fitness secrets with Shape magazine in their March issue. The 31-year old works hard for her body, and all that hard work is paying off, as she's one of the top celebs on the mag's annual list for the Sexiest Body in Hollywood. Through out the years, Pressly always exercised really hard and believes in training with the motto, "no pain, no gain!" Her secrets:

Like a lot of first-time mothers, Jaime allowed herself to eat whatever she wanted while she was pregnant. “I gained 42 pounds,” says the 5-foot-4-inch actress. “That’s a lot of weight for mama!” After her son was born, she set a specific goal: to get back in shape in time for her 30th birthday party. “I needed to get in the gym and run on the treadmill and lift weights,” she says. By the time her birthday arrived, she felt confident enough to celebrate by a pool in Las Vegas with her best friends—in a bikini.

I hate even posting about it, because my personal opinion on Jessica Simpson's weight is really "So What?!" A saying, that Tyra Banks claimed on her talk show to empower women to feel confident about themselves no matter what "imperfections" society may view them to have. I'm glad Simpson is standing her ground, and I think that all us women should stick together. Everyone's body type is different, everyone's weight fluctuates (I know mine sure can!), and as long as she's healthy and happy with herself - that's all that matters. Anyway, here's the latest on Simpson vs. Her Weight:
Simpson donned skin-tight leather trousers and blasted criticism of her weight gain during her first performance since the media mocked her fuller figure. The singer made headlines after she was pictured looking notably curvier on-stage at a concert in Pembroke Pines, Florida on Sunday (25Jan09). The photos prompted criticism of her weight gain - and the star's sister Ashlee branded the media attention "embarrassing and belittling" in an angry rant on her blog. But stepping to the stage again, Simpson seemed to take the controversy in her stride - strutting across the stage in black leather trousers as she opened for Rascal Flatts in Charlottesville, Virginia on Thursday (29Jan09). She told the crowd:
